Home Made Yogurt Recipe (Dahi / Curd)

Let's learn how to make yogurt (curd) at home.
With just 2 ingredients and a few easy steps, we can make a Creamy Yogurt-Curd at our home.
Full Cream Milk - 1 cup (250ml)
Curd - 1 tsp
It's best to use full cream milk. It will give you a thick and creamy yogurt. (You can use Toned milk or any other brand milk you have).
For a good outcome, the best time to mix is in the evening, before going to bed or before closing your kitchen.
Pour the milk in the vessel and bring it to boil.
Once boiled cover it with a lid, leave the lid little open to let the fumes escape (this will help to form Cream/Malai) and keep aside to cool.
Take 1-tsp of curd in the bowl in which you want the Yogurt /curd to set.
Mix well and pour 1-cup of milk in it, mix again.
Note - No need to warm the milk. Use either cold or normal room temperature milk.
Close with a lid and keep aside in room temperature.
It will set in the morning. Once it's set, check and refrigerate.
Remove from the refrigerator, 30 minutes before consumption.
That's it. Your thick Creamy Yogurt is ready.
You can use this as per your choice, have it plain, make lassi, buttermilk, or with rice or paratha.
If you forgot to mix in the night No Worries.
Use 1 & 1/2 - tsp of yogurt /curd in the bowl, mix it.
Add 1 - cup of lukewarm full cream milk, mix well.
Cover with a lid.
It will set in 2-4 hours.
Note: This curd, made in the day within a few hours, will break and become watery. Best to remember to do it the night before.
